Marmalade, Chia + Gin Cakes
INGREDIENTS
* 3 eggs
* 1 1/2 cups natural Greek-style yoghurt
* 1/2 cup olive oil
* 1/2 cup sugar
* 1 tsp vanilla bean paste
* 1/4 cup Rainforest Lime and Kumquat Marmalade
* 3/4 cup buckwheat flour
* 1 1/2 cups almond meal
* 3 tsp baking powder
* 2 tsp chia seeds
FOR THE GLAZE
METHOD
Preheat the oven to 160oC.
- Place the eggs, yoghurt, oil, sugar, vanialla bean paste and Currong Comestibles Rainforest Lime and Kumquat Marmalade in a large bowl and mix with a large spoon. Add the flour, almond meal, baking pwoder and chia seeds and mix well to combine.
- Pour into lightly greased mini load tins, lined with non-stick baking paper. Cook for 25-30 mins or until cooked with tested with a skewer. If using one large loaf tin, cook for 55-60 mins.
- Set aside to cool slighly in the tin before turning out onto a wire rack to cool further.
- To make the glaze, place the Currong Comestibles Rainforest Lime and Kumquat Marmalade and gin in a small sauce pan over low heat. Warm up the glaze, stirrring regularly.
- Drizzle over still warm cakes, and serve.
