Spicey Riberry Toastie


* 3 tbsp salted butter
* 2 red onions, thinly sliced
*1 tbsp balsamic vinegar
* 1 tbsp fresh thyme leaves
* 4 slices dark rye bread
* 2 tbsp Spicy Riberry Chutney
* 1 cup vintage chedder cheese, shredded


  1. Melt 2 tablespoons butter in a large skillet over medium-high heat. When the oil shimmers, add the onions and cook for 15 minutes or until the onions are golden and caramelised. Add the balsamic vinegar and thyme, cook another minute. Remove from the heat.
  2. Brush the outside of each slice of bread with olive oil. On the inside half on the slices of meat, spread an even layer of the Spicy Riberry Chutney. Top with the chesses and onion. Add the top piece of bread, olive oil side facing up.
  3. Place the sandwiches in the skillet and cook until golden on each side, about 3-5 minutes per side. During the last minute of cooking, add 1/2 teaspoon butter. Serve immediately.
